Chocolate Truffles

INGREDIENTS

1 150 gram pac Deluxe white; milk or plain
; chocolate (5oz)
2 tb Milk
4 ts Liqueur or spirit eg Cointreau; brandy or rum
5 tb Icing sugar; sifted
Melted chocolate to coat
Icing sugar and cocoa powder to dust

INSTRUCTIONS

1. Break the chocolate into pieces, place in a large mixing bowl over
a saucepan of simmering water, stirring occasionally until melted.
2. Add the milk, liqueur or spirit and icing sugar, mixing well to
blend. Allow to cool then cover and chill until firm.
3. Roll the mixture into small balls, coat with melted chocolate and
leave to set. Either dust with sifted icing sugar or cocoa powder or
drizzle with melted chocolate of a different colour. Serve in petit
four cases or cases made from chocolate. If making white chocolate
truffles, use an orange liqueur such as Grand Marnier or Cointreau to
flavour the mixture.
When making milk chocolate truffles, use brandy as the flavouring.
If using plain chocolate for the truffles, use rum as the flavouring.
To make chocolate cases; brush the inside of petit four paper cases
with melted white, milk or plain chocolate. Leave to set in a cool
place then carefully peel away the paper case. Chill until required.
