Mayonaise
Caper Berries
Red Onion
Red Salmon
Vinaigrette
Japanese Pickled Red Ginger

INSTRUCTIONS

Halve and remove centre core of chokos, steam lightly for 3-4 mins,
allow to cool, then cut into fat chips, spoon on mayonnaise and
lightly mix through  Plate up with caper berries, arrange red onion and
top with red  salmon or idea is even simpler. Steam chokos and "splay
slice' from  top to bottom, and arrange in a 'round". Sprinkle with
vinaigrette  and top with Japanese pickled red ginger.  Converted by
