Chopped Bistro Salad With Herb Dressing

INGREDIENTS

1 Bunch broccoli
1 Sweet red or yellow pepper
seeded and diced
1 Carrot, peeled and grated
1/2 English cucumber, seeded and
diced
2 Stalks celery, coarsely
chopped
1 Garlic, minced
2 T Chopped fresh parsley
2 T Chopped fresh chives or
green onion
1 T Chopped fresh dill
2 T Lemon juice
2 T Red wine vinegar
1/3 c Olive oil
1/4 t Salt
1/4 t Pepper

INSTRUCTIONS

Break broccoli florets into small pieces.  Peel stems and cut into
small pieces. In a large bowl, combine broccoli, sweet pepper,  carrot,
cucumber and celery. In a small bowl, combine garlic,  parsley, chives,
dill, lemon juice, vinegar, olive oil, salt and  pepper. Whisk to
combine well. Pour dressing over salad ingredients.  Toss well and
serve. Yield: 6 servings. Prep. Time: 20 minutes.  Typed in MMFormat by
