Chopped Bistro Salad with Herb Dressing

INGREDIENTS

1 sm Bunch broccoli
1 Sweet red or yellow pepper, seeded and diced
1 Carrot, peeled and grated
1/2 English cucumber, seeded and diced
2 Stalks celery, coarsely chopped
1 cl Garlic, minced
2 tb Chopped fresh parsley
2 tb Chopped fresh chives or green onion
1 tb Chopped fresh dill
2 tb Lemon juice
2 tb Red wine vinegar
1/3 c Olive oil
1/4 ts Salt
1/4 ts Pepper

INSTRUCTIONS

1.  Break broccoli florets into small pieces.  Peel stems and cut into
small pieces.
2.  In a large bowl, combine broccoli, sweet pepper, carrot, cucumber
and celery.
3.  In a small bowl, combine garlic, parsley, chives, dill, lemon
juice, vinegar, olive oil, salt and pepper.  Whisk to combine well.
4.  Pour dressing over salad ingredients.  Toss well and serve.
Yield: 6 servings.  Prep. Time: 20 minutes.  Typed in MMFormat by
