INGREDIENTS

225 g Pork; minced coarsely
; (8oz)
75 g Pork fat; minced (3oz)
3 tb Malt vinegar
1/2 ts Salt
1/2 ts Ground black pepper
2 Cloves garlic; crushed
2 ts Cayenne pepper
1 tb Paprika
1 ts Coriander seeds; crushed
1/2 ts Powdered cinnamon
1/2 ts Oregano
1/2 ts Marjoram
A pinch of grated nutmeg
A pinch of ground cloves

INSTRUCTIONS

Mix all the ingredients together thoroughly.
Place in a refrigerator in a non-metallic bowl and marinate overnight.
Keep it uncovered in the fridge and stir daily.
To cook, stir the desired amount into a little hot oil and fry for 5-7
minutes until crisp and crumbled. Use as a garnish for antojitos
(light meals) or as a flavouring for other foods.
