INGREDIENTS

225 g Pork, minced coarsely
8oz
75 g Pork fat, minced 3oz
3 T Malt vinegar
1/2 t Salt
1/2 t Ground black pepper
2 Cloves garlic, crushed
2 t Cayenne pepper
1 T Paprika
1 t Coriander seeds, crushed
1/2 t Powdered cinnamon
1/2 t Oregano
1/2 t Marjoram
A pinch of grated nutmeg
A pinch of ground cloves

INSTRUCTIONS

Mix all the ingredients together thoroughly.  Place in a refrigerator
in a non-metallic bowl and marinate overnight.  Keep it uncovered in
the fridge and stir daily.  To cook, stir the desired amount into a
little hot oil and fry for 5-7  minutes until crisp and crumbled. Use
as a garnish for antojitos  (light meals) or as a flavouring for other
