INSTRUCTIONS
Combine chopped vegetables; sprinkle with salt. Let stand 4 to 6 hours in a
cool place. Drain well.
Prepare home canning jars and lids according to manufacturer's
instructions.
Combine vinegar, sugar, and spices; simmer 10 minutes. Add vegetables;
simmer 10 minutes. Bring to boiling. Carefully ladle hot relish into hot
jars, leaving 1/4-inch headspace. Adjust caps.
Process 10 minutes in a boiling water bath canner.
