Christmas Crawfish Stuffing

INGREDIENTS

8 oz Pk cornbread stuffing mix
1/4 lb Butter
1 c Celery — chopped
1/2 c Bell pepper — chopped
1/3 c White onion — chopped
1 lb Crawfish — chop coarse
1 ts Salt
2 ts Prudhomme's Seafood Magic —
Or
Creole seasoning
1/2 c Green onion — chopped
1 cn Water chestnuts — sliced
1 c Water

INSTRUCTIONS

Melt butter and saute celery, bell pepper and onion until limp. Add the
crawfish tails, sprinkle with salt and Seafood Magic. Saute for 5 minutes.
Add the stuffing, water chestnuts, green onion and water. Mix well. Spoon
into a buttered dish or turkey cavity. Bake uncovered at 350~ for 25
minutes. Yields 6 cups
