INGREDIENTS

12 Fresh jumbo shrimp – peeled
1/4 lb Mixed baby greens – chopped
2 lg Ripe peaches
1 tb Lemon juice
1 bn Scallions – chopped
1 tb Jalepeno pepper – minced
2 tb Cilantro – chopped
1/4 c Olive oil
2 tb Sherry wine vinegar
2 ts Honey
Salt and pepper

INSTRUCTIONS

FOR SALSA
Directions In a large pot of boiling water, cook the shrimp. Once
cooked, set aside to cool. To make salsa, peel and pit the peaches.
Cut the peaches into medium dices. Combine peaches with lemon juice.
Combine remaining ingredients with peaches. Allow the salsa to sit
for an hour before serving. Pile greens on plate. Place shrimp on
greens and top with salsa. Serves 2.
