INGREDIENTS
4 | c | Chicken broth |
1 | c | Apple juice |
1/2 | c | Cubed peeled sweet potatoes |
1/2 | c | Cubed peeled turnips |
1/2 | c | Diced celery |
1/2 | c | Diced onions |
1 | Clove garlic, minced | |
1 | T | Snipped fresh parsley |
2 | t | Snipped fresh thyme or 1 tsp |

1 | c | Broccoli florets |
1 | c | Cooked baby lima beans |
1 | c | Diced cooked turkey |
Shredded Gruyere or Swiss | ||

INSTRUCTIONS
Combine the broth and apple juice in a 3 or 4 quart saucepan. Place over medium heat. Add the sweet potatoes, turnips, celery, onions, garlic, parsley, thyme and rosemary. Cover and bring to a boil. Reduce heat and simmer for 30 minutes. Add the broccoli, lima beans and turkey. cover and simmer until the vegetables are tender, about 20 minutes. Garnish with the cheese. Servings: 2 If using chicken, substitute white potatoes for the sweet potatoes, and carrots in place of the broccoli.
