INGREDIENTS

1/3 c Vinegar
1 c Sugar
2 c Semi-ripe fruit (if its soft or sweet; its too ripe)
1/2 c Raisins
1 Chili pepper; seeded and chopped (or can use hot sauce to taste)
2 tb Fresh ginger root; peeled and finely chopped
1/2 c Onion; finely chopped
2 Cloves garlic; finely chopped

I have some chutney recipes in my Healing Heart Handbook. Here's a basic
one you can use for most fruits. I use not-quite-ripe mangos. I've used
nectarines, citrus, crabapples, guava and many other fruit.
Boil sugar and vinegar 5 minutes, add all other ingredients, slow cook 90
minutes. Seal in sterile jars or refrigerate.
