INSTRUCTIONS
Place all the ingredients except the olive oil into a heavy based
saucepan and bring up to the boil.
Place on a lid and cook gently for 15-20 minutes until the apple is
well broken down.
Remove the lid and reduce the liquid.
Place the ingredients into a food processor and blitz. Add the olive
oil, a little at a time. Adjust the seasoning.
Pass through a fine sieve and chill.
