INGREDIENTS
1/2 | qt | Unsweetened apple cider |
1/2 | Granny smith apple, peeled | |
and cut into | ||
1/2-inch pieces | ||
1/8 | c | Cider vinegar |
1/8 | c | Honey |
1 | t | Garlic, minced |
1 | Fresh thyme sprig | |
1 | t | Mustard seeds |
3 | Juniper berries, crushed | |
1 | t | Freshly ground pepper |
INSTRUCTIONS
Combine all of the ingredients except the pepper in a non-reactive med. saucepan and bring to a boil over high heat. Lower the heat to moderate and simmer until the apples are tender, about 20 min. Strain the mixture into another non-reactive sa ucepan, add the pepper and cook over high heat until reduced to 1/2 cup, about 15 to 20 min.
