INSTRUCTIONS
Blend yolks, sugar and cornflour together in a large bowl with a
little single cream. Grind the cinnamon sticks.
Bring rest of single cream to the boil in a large pan with the ground
spice. Pour boiling cream on to the egg mixture, whisking vigorously
all the time until the custard thickens. Allow to cool.
Whisk double cream to a soft flop and fold into the cool custard.
Pour into an ice cream maker and churn to double the bulk and make a
lighter ice cream.
