Louisiana yams; cooked and mashed |

Shortening; melted |

Walnuts; chopped |
INSTRUCTIONS
Sift flour, baking powder, salt and cinnamon together. Beat egg yolks well;
add milk and yams and beat until blended. Add to sifted ingredients and mix
well. Add melted shortening and mix well. Beat egg whites until stiff but
not dry; fold into yam mixture. Pour batter on preheated waffle iron and
sprinkle with nuts. Bake about 5 5o 7 minutes or until done.
