INGREDIENTS

1/4 c Fruity olive oil
1 tb Sherry vinegar; or to taste
2 ts Soy sauce
2 ts Peeled fresh ginger; finely julienned
1 pn Cayenne pepper
Salt; to taste
Freshly-ground black pepper; to taste
1 tb Finely-minced fresh mint
1 1/2 c Fresh orange sections
1 1/2 c Fresh grapefruit sections
1 Lime or lemon; peeled, seeded,
; and sectioned
1 dr Honey; to taste

INSTRUCTIONS

Combine the olive oil, vinegar, soy sauce, ginger, cayenne, salt,
pepper and mint in a small bowl and whisk to combine. Pour over
citrus sections and add drops of honey to taste depending on tartness
of fruit. Stir gently to combine. This recipe yields ? servings.
