INGREDIENTS

110 g Self raising flour, 4oz
1 Egg
75 g Melted butter, 2oz
300 Milk, 10fl oz
7 Plums
110 g Caster sugar, 4oz
Mixed spice
1 pn Salt
110 g Plain flour, 4oz
1 t Sugar
1 pn Bicarbonate of soda
1 pn Cinnamon
1 T Maderia
Enough water to make a thick
paste
Apricots and bananas
Icing sugar to sprinkle
14 Fat, 1/2 Other Carbohydrates

INSTRUCTIONS

For the plum batter: Sift the flour into a bowl and make a well in the
centre. Add the egg to the well and mix round, incorporating more
flour as you go. Add the melted butter and beat well. Then add the
milk and beat again.  Place the plums in the bottom of the buttered and
sugared ramkins.  Pour mixture over the plums and some sugar which you
have placed in a  greased dish and bake at 190øC/375øF/gas mark 5.
For the clafoutis: Mix all the ingredients together. Dip the fruit in
the batter and deep fry in hot oil. Sprinkle with icing sugar.
