Classic Chicken and Rice Casserole

INGREDIENTS

Vegetable cooking spray
1 tb Olive oil
1 lb Chicken white meat; pieces
2 c Rice
1 md Onion; chopped
1 md Red bell pepper; chopped
1 md Green bell pepper; chopped
1 Clove garlic; minced
1 1/2 ts Salt; optional
1 1/2 ts Basil
3 1/2 c Chicken stock
1 tb Lime juice
1/8 ts Ground saffron OR 1/2 teaspoon turmeric
1 Bay leaf
1 md Tomato; chopped
1 c Frozen green peas; thawed

INSTRUCTIONS

Spray rice cooker with vegetable non-stick spray. Add all ingredients
except tomato and green peas. Stir. Cover and cook until rice cooker shuts
off. Carefully remove cover. Fold in tomatoes and peas. Cover and allow to
steam for 10 minutes.
Serves 8. [PER SERVING: 305 calories; 7.2 g fat (total); 1.71 g saturated
fat; 35.1 mg cholesterol; 649 mg sodium]
