Classic Gazpacho

INGREDIENTS

3/4 lb Red ripe tomatoes; (2 to 3)
2/3 c Chopped onions
1 lg Garlic clove
1 Cucumber – (abt 6 oz); peeled, seeded
1 Red bell pepper; chopped
4 oz Crustless French bread -; (about 3 cups
Coarsely chopped)
2 tb Spanish or very fruity olive oil
1/4 c Sherry vinegar
Salt; to taste
Freshly-ground black pepper; to taste

6 tb Finely-chopped green bell pepper
6 tb Finely-chopped red bell pepper
6 tb Finely-chopped onion
6 tb Finely-chopped cucumber
6 tb Finely-chopped hard-boiled egg
6 tb Finely-chopped olives
3/4 c Small croutons

INSTRUCTIONS

In a food processor or blender puree tomatoes, onions, garlic,
cucumber, red pepper, bread, olive oil and vinegar until very smooth,
2 minutes or more. Refrigerate several hours. Before serving, season
with salt and pepper and strain through a sieve if desired. Thin with
ice water if needed. Divide among 6 soup bowls and offer choice of
garnishes. This recipe yields 6 servings.
