Classic Green Salad With Sauteed Mushrooms

INGREDIENTS

1/2 c Chopped onion
1 c Sliced mushrooms
2 T Raspberry or red wine
vinegar
Salt and pepper
4 c Mixed greens of choice
Fantastic Raspberry
Vinaigrette
Fresh thyme or tarragon
leaves optional
Cooking spray
1 Lightly spray a medium
skillet and saut about 3
minutes.
onion over
medium-high heat
until soft
2 Add mushrooms, reduce heat
to
medium and
continue cooking
for 10 minutes
until mushrooms are
softened. Add
vinegar and cook
until vinegar is
well absorbed
about 1 minute.
Season to taste
with salt and
pepper.
3 Place greens in a large
salad bowl and if'
using.
Toss
pour hot mushroom
mixture over top.
well and serve
Add vinaigrette and
fresh herbs
immediately.

INSTRUCTIONS

Sauted mushrooms and onion in a hot vinegar sauce are poured over the
greens to wilt and warm them. Sprinkle liberally with fresh thyme or
