INSTRUCTIONS
In a small bowl, combine onion and garlic. Pour enough boiling water over
to cover. Let stand 2 minutes and drain. Add tomatoes, pepper, 1 tablespoon
lime juice and cilantro or parsley.

NOTES : Makes about 4 cups. Fresh salsa does not keep well, no more than
one
day in the refrigerator. This is a good quantity for a large party
- you may
want to cut it in half for a smaller gathering.
