INGREDIENTS

125 g Skinned, boneless chicken
breast cut into
thin strips 4oz
2 T Sherry
1 1/4 Chicken stock, 2 pints
1 T Soy sauce
1 Watercress, roughly chopped
Salt and freshly ground
black pepper
Oil for frying
2 Bread

INSTRUCTIONS

Place the chicken in a bowl and pour over the sherry. Place the stock
and soy sauce in a saucepan and bring to the boil. Add the chicken  and
sherry and simmer for 5 minutes. Stir in the watercress and  simmer for
5 minutes. To make the croutons, cut the bread into 1 cm  (1/2 inch)
squares and fry in the oil until crisp and golden. Drain  and serve
with the soup.  Converted by MC_Buster.  NOTES : A delicious quick and
easy soup to prepare. Ideal for a  starter or for a light lunch.
