INGREDIENTS
| 1 | tb | Minced shallot |
| 3 | tb | Chopped cilantro |
| 1/3 | c | Lime juice |
| 1 | ts | Dijon mustard |
| 1/4 | ts | White pepper |
| 1/2 | ts | Minced garlic |
| 1/2 | ts | Salt |
| 1/2 | ts | Sugar |
| 1 | c | Olive oil |
INSTRUCTIONS
In a food processor combine all ingredients except oil and process for 1 minute. With motor running, add oil in a slow, steady stream and process until thick and creamy.
