Cocoa-Molassas Bundt Cake

INGREDIENTS

1 3/4 c Flour
3 tb Dutch process cocoa
1 1/2 ts Baking powder
1 1/2 ts Baking soda
1/2 ts Salt
1 1/2 c Low-fat buttermilk
1 c Sugar
1/2 c Applesauce
1/2 c Molasses
1 Egg
2 tb Margarine
3 Egg whites; beaten until stiff

INSTRUCTIONS

Preheat oven to 350. Spray 10 inch bundt pan with nonstick cooking spray.
Flour lightly. Combine flour, cocoa, baking powder, baking soda and salt.
In another bowl combine buttermilk, sugar, applesauce, molasses, egg and
margarine. Add flour mixture to applesauce mixture. Beat with electric
mixer into until applesauce is moistened. Beat on high speed 3 minutes.
Gently fold in beaten egg whites. Pour batter into prepared pan. Bake 55
minutes, or until toothpick comes out clean. Cool 15 minutes. Sprinkle with
confectioner's sugar.
