Cod Fillet With Herbed Tomato Sauce From Lhj

INGREDIENTS

1 T Olive oil
1/4 c Finely chopped onion
1 t Minced garlic
1 Tomatoes, 14 oz.
1/4 t Salt
1/8 t Thyme
2 T Chopped fresh flat-leaf
parsley
1 1/2 lb Cod fillet, 1-inch thick
3 T Chopped fresh flat-leaf
parsley
1 T Extra-virgin olive oil
1/2 t Minced garlic
1/4 t Salt
1/4 t Freshly ground pepper

INSTRUCTIONS

Make Tomato Sauce: Heat oil in medium skillet over medium heat. Add
onion and cook until tender, 3 minutes. Stir in garlic and cook 10
seconds. Add tomatoes, salt and thyme; cook over high heat, breaking
up tomatoes with a spoon, until thick, about 10 minutes more. Remove
from heat and stir in parsley. Meanwhile, cut cod into 4 pieces and
arrange in shallow microwaveproof dish. Combine parsley, oil, garlic,
salt and pepper in small bowl; spread over cod. Cover with wax paper
and microwave on High 6 to 8 minutes, or until cod is opaque
throughout. Spread tomato sauce on serving platter and arrange cod on
top.  PER SERVING Calories 225 Total Fat 8 g Cholesterol 73 mg Sodium
