Coffee And Almond Slice

INGREDIENTS

125 g Butter
1 c Caster sugar
1 ts Vanilla essence
1 Egg
1 c Self-raising flour
1 c Sultanas
1 1/2 c Icing sugar
1 ts Butter
1 c Strong black coffee
1/2 c Flaked almonds; toasted

INSTRUCTIONS

ICING
1. Line a lamington tin with Glad Bake. Pre-heat oven to 180deg.C.
2. Cream butter, sugar and vanilla in an electric mixer or food
processor. Add egg and beat until combined. Stir in flour and
sultanas.
3. Spread mixture into prepared tin and bake for 15-20 minutes or
until golden. Remove from oven and cool on wire rack.
4. Place icing sugar and butter into food processor and mix to
combine. Add a teaspoon of coffee and process again. Keep adding
coffee, a little at a time, until the mixture is of spreadable
consistency. Spread icing on cold slice and sprinkle over the
almonds. Sit back and enjoy the remaining coffee.
