INSTRUCTIONS
BATTER
SPICE MIX
Spice mix: stir together.
Batter: Mix dry ingredients and make well.
Cream butter, sugar and egg. Add yoghurt milk and vanilla. Pour into well
and stir to moisten.
Fill greased muffin tins 1/3 full. Sprinkle on spice mix. Cover with more
batter, filling to 2/3 full. Bake 400 20-25 min.
*Variations:
: 1. Decorate or glaze while hot with simple, thick icing made from
powdered sugar and a little liquid.
: 2. Replace some or all of vanilla with another extract such as
almond.
: 3. For a crunchy top, place half of spice mix inside muffins, and
the rest on top before baking.
: 4. Replace some or all of cinnamon with other spice(s) such as
nutmeg.
: 5. Sprinkle a very small amount of finely grated citrus peel over
first layer of batter before the spice mix.
: 6. Use rum or other liquor instead of vanilla.
