Coffee Pecan Pie

INGREDIENTS

3 Eggs, beaten
1/4 ts Salt
3/4 c Unsulfured molasses
1 ts Vanilla
3/4 c White corn syrup
1 c Chopped pecan meats
1/2 c Double-strength coffee
4 tb Flour
2 tb Butter or margarine, melted
1 8-inch unbaked pie shell

INSTRUCTIONS

Preheat oven to 375' F. Combine eggs, molasses, corn syrup, coffee, melted
butter or margarine, salt and vanilla. Mix thoroughly. Combine pecans and
flour, add to liquid mixture and pour into unbaked pie shell. Bake 40 to 45
minutes in moderate oven, 375' F., or until firm. Cool before cutting.
Garnish with whipped cream if desired. Portions should be smaller than
average.  Yield: 7 servings.
