Cold Cantaloupe Soup With Blueberry Papaya Relish

INGREDIENTS

1 Ripe papaya, peeled and cut
into
1/2-inch dice
1/2 c Fresh blueberries
1 T Fresh lemon juice
2 T Fresh mint chiffonade
1 Ripe cantaloupe, peeled and
coarsely
chopped
2 T Fresh lime juice
1 T Honey
Seltzer

INSTRUCTIONS

How to Prepare the Relish:  Combine the papaya, blueberries, lemon
juice, and mint in a medium  bowl. Let sit at room temperature for 1
hour.  How to Prepare the Soup:  Place the cantaloupe, lime juice, and
honey in a blender and blend  until smooth. Ladle the soup into bowls,
add a splash of seltzer, and  top with the relish.  © 1997 Lifetime
