Cold Salmon Platter With Tarragon Marinade

INGREDIENTS

3 Potatoes, cooked & halved
2 T Minced white onion
TARRAGON MARINADE
1 7 1/2oz salmon drained &
Chunked
1 Sliced tomato
1/2 Sliced cucumber
2 Hard boiled eggs, halved
Chilled lettuce
1 T Minced parsley
1 T Chopped green onion

INSTRUCTIONS

Sprinkle warm potato halves with onion: pour marinade over all. Cover
& refrigerate several hours. Drain, reserving marinade. Arrange
salmon, tomatoes, cucumbers & eggs on lettuce lined platter; sprinkle
parsley on potatoes & green onion on salmon. Serve with reserved
marinade.  File
