INGREDIENTS

2 tb Oil
2 tb Lemon juice
1 Flavour sachet from MAGGI 2 Minute; Fried Onion Flavour
; Noodles
1 ts Grated fresh root ginger
1 ts Sesame oil
1 ts Fish sauce; (optional)
1 pk MAGGI 2 Minute Noodles; Fried Onion Flavour
100 g Asparagus or green beans
100 g Snow peas or broccoli florets
1 Red pepper; sliced
2 Spring onions; sliced diagonally
1/4 c Fresh coriander leaves or parsley sprigs
1/4 c Roasted cashew nuts or peanuts

INSTRUCTIONS

DRESSING
SALAD
Dressing:
Combine all the ingredients in a bowl and whisk together. Set aside.
Salad:
Break the noodles.
Cook in 4 cups boiling water for 2 minutes then drain.
Rinse with cold water and drain thoroughly.
Cook the asparagus or beans in boiling water for 2-3 minutes.
Remove and rinse with cold water. Drain thoroughly.
Combine the noodles, green vegetables, red pepper and spring onions
in a serving bowl.
Pour the dressing over the salad.
Top with the coriander or parsley and nuts, and serve immediately.
