Colourful Noodle Salad

INGREDIENTS

2 T Oil
2 T Lemon juice
1 Flavour sachet from MAGGI 2
Minute Fried Onion
Flavour
Noodles
1 t Grated fresh root ginger
1 t Sesame oil
1 t Fish sauce, optional
1 MAGGI 2 Minute Noodles
Fried Onion Flavour
100 g Asparagus or green beans
100 g Snow peas or broccoli
florets
1 Red pepper, sliced
2 Spring onions, sliced
diagonally
1/4 c Fresh coriander leaves or
parsley sprigs
1/4 c Roasted cashew nuts or
peanuts

INSTRUCTIONS

Dressing  Combine all the ingredients in a bowl and whisk together. Set
aside.  Salad  Break the noodles.  Cook in 4 cups boiling water for 2
minutes then drain.  Rinse with cold water and drain thoroughly.  Cook
the asparagus or beans in boiling water for 2-3 minutes.  Remove and
rinse with cold water. Drain thoroughly.  Combine the noodles, green
vegetables, red pepper and spring onions  in a serving bowl.  Pour the
dressing over the salad.  Top with the coriander or parsley and nuts,
