INSTRUCTIONS
Pound chicken to 1/2" thickness; sprinkle with 1 1/2 tsp of the cumin and
salt. Heat oil in 10" non-stick skillet over medium high heat. Cook chicken
in oil 4 to 5 minutes per side; remove and reserve. Cook onion and garlic
in drippings until tender; about 4 minutes. Add pace, tomatoes, and
remaining 1/2 tsp cumin; simmer uncovered 5 minutes. Return chicken to
skillet. Spoon sauce over chicken; heat through. Sprinkle with cilantro.
