INSTRUCTIONS
FILLING
Mix flour, butter, egg yolks, and sugar. Knead with hands. Add lemon juice
and grated rind. When well blended and smooth, chill for several hours.
Roll 1/4-inch thick. Divide in two parts. Line an oblong tin with half the
dough and sprinkle with bread crumbs. Fill with sliced apples, sugar, and
raisins. Sprinkle with cinnamon. Cover with the remaining dough. Brush top
with slightly beaten egg white and bake at 350 degrees 30 to 35 minutes or
until apples are tender. Dust with powdered sugar and cut in squares. Serve
hot or cold with whipped cream. Serves 6.
