1 lg Head cauliflower; trimmed and chopped
1 Red onion; chopped
1 Green bell pepper; seeded and chopped
4 Scallions; minced
3 tb Fresh chives; chopped
2 c Cooked basmati rice
1/2 c Bottled vinaigrette dressing

INSTRUCTIONS

Prep: 10 min, Cook: 10 min, plus chilling time. Place cauliflower in a
steamer basket over boiling water. Cover pan and steam about 3 minutes,
until almost tender. Chill . Combine next 5 ingredients in a bowl. Add
chilled cauliflower, drizzle with dressing and serve chilled. ]]]]]
