Ingredients: 3 lg Cucumbers; 2 md Tomatoes; 1 md Bell pepper; (green); 1 bn Green onion; 1/2 c Soy sauce; (lite or regular); 6 c Cooked rice

2	md	Tomatoes

1	bn	Green onion
1/2	c	Soy sauce; (lite or regular)
6	c	Cooked rice

INSTRUCTIONS

Cut cucumbers into small bite-size pieces, then add diced tomatoes, green
bell pepper and green onions. Add soy sauce and let set for 20-30 minutes,
stirring frequently. Serve over cooked rice. I serve this with teriyaki
chicken in the summer for a cool side dish.
