Corn And Potato Chowder

INGREDIENTS

1/2 c Chopped Onion
1/2 c Chopped Red Bell Pepper
3 c Frozen Corn; Thawed
3 c Vegetable Broth
1/8 ts Cayenne Pepper
2 md Potatoes; Peeled, Cubed,
; Cooked Til Tender
2 tb Chopped Parsley
1 tb Chopped Green Onion

INSTRUCTIONS

Saute the onion and red pepper in a pot lightly sprayed with oil
until the onions are very limp.
Put 2 cups of corn and 1 cup of the broth in a blender and process
until smooth.
Add the puree to the pot of onions and peppers.
Add the cayenne pepper, potatoes and remaining corn and broth.
Heat through, sprinkle with parsley and green onion on top, and serve.
