Corn And Tomato Garnish

INGREDIENTS

2 Ears Corn; roasted or boiled,
Kernels cut off; and reserved
2 Italian Roma tomatoes; seeded and diced
2 Scallions; washed, sliced
; into thin rings
1/2 ts Salt
1/4 ts Freshly-ground black pepper
1 tb Crema; see * Note
(or creme fraiche or sour cream)

INSTRUCTIONS

* Note: See the "Crema" recipe which is included in this collection.
Stir together corn kernels with all other ingredients in a small bowl.
Serve 2 spoonfuls on top of each serving of Avocado Soup (the recipe
for which is included in this collection) or other soup of your
choice. This recipe yields 6 servings as a garnish.
