INGREDIENTS

15 oz Black beans, rinsed and drained
1 c Corn, thawed
1/2 c Red bell pepper, chopped
1/2 c Cilantro, chopped
8 Whole green olive, sliced
3 tb Lime juice, fresh
2 tb Balsamic vinegar
1/2 ts Cumin, ground
1/4 ts Salt

INSTRUCTIONS

Combine all ingredients. Store in refrigerator up to 3 days in an airtight
container. Yeild: 4 cups
