INGREDIENTS

1 tb Olive oil
3 Hot chillies
2 Cloves garlic
1 tb Ground cumin and coriander
2 Tomatoes; pureed
225 g Pureed sweetcorn; (8oz)
225 g Pureed onions; (8oz)
600 ml Milk; (1 pint)
600 ml Chicken or vegetable stock; (1 pint)
225 g Fresh corn kernels; (8oz)
3 lg Potatoes; diced
2 Roasted red peppers; diced
2 tb Salt
1 ts Ground black pepper
1/2 ts Cayenne pepper
4 tb Double cream
1 tb Chives; snipped
2 tb Flat leaf parsley; chopped

INSTRUCTIONS

Cook the hot chillies in the oil for 2 minutes. Add the garlic,
spices, tomatoes, sweetcorn and onions. Cook for 10 minutes.
Next add the milk and stock, corn kernels, potatoes, red peppers and
seasonings. Cook until the potatoes are tender, about 20 minutes.
Add the double cream, chives and parsley. Check seasoning and serve
immediately.
