INGREDIENTS

1 c All-purpose flour
1 1/2 ts Baking powder
1/2 ts Salt
2/3 c Cornmeal
1 tb Sugar
2 tb Melted bacon drippings
1 Egg; beaten
1 To
1 1/4 c Buttermilk
1/2 ts Baking soda
1 (16-ounce) package frankfurt
Vegetable oil
Prepared mustard, catsup
Picante sauce (optional)

INSTRUCTIONS

Combine flour, baking powder, salt, cornmeal, and sugar; stir in bacon
drippings.  Combine egg, buttermilk, and soda; mix well. Stir into flour
mixture, mixing well.  Cut each frankfurter into 10 pieces. Dip frankfurter
sections into batter, coating completely. (Use wooden picks to aid in
dipping.) Fry in 3 to 4 inches hot oil (375 degrees) until golden, turning
once; drain on paper towels.Insert party picks, and serve immediately.
Serve with desired condiments. Yield: about 20 appetizer servings.
