Corn Pancakes with Maple Fruit Compote

INGREDIENTS

2 c Organic cornmeal
1 1/2 ts Salt
2 ts Baking soda
1/2 c All-purpose flour
4 oz Butter
2 c Buttermilk
1 c Milk

INSTRUCTIONS

Mix together the cornmeal, salt, soda, flour and butter until the mixture
resembles coarse meal. Add buttermilk and milk. Stir to moisten and form a
batter.
Combine fresh berries and slices of stone fruit with maple syrup to make
the compote to serve with the pancakes.
