| 1 | Green bell pepper; diced | |
| 1 | Red bell pepper; diced | |
| 1 | c | Vinaigrette dressing (see recipe) |
| 1/4 | c | Chopped parsley |
| Salt & pepper to taste |
INSTRUCTIONS
SERVES 6 This is a lovely way to serve a cold corn dish, in summer or winter. Frozen corn works fine with this. Melt the frozen corn in a large bowl of hot water from the tap. When melted, drain the corn very well. Mix all ingredients together and refrigerate for 1 hour before serving. Serve as a cold side dish or salad. From <The Frugal Gourmet Cooks American>.
