Green bell pepper; diced

Red bell pepper; diced

Vinaigrette dressing (see recipe)
1/4
c
Chopped parsley
Salt & pepper to taste
INSTRUCTIONS
SERVES 6
This is a lovely way to serve a cold corn dish, in summer or winter.
Frozen corn works fine with this.
Melt the frozen corn in a large bowl of hot water from the tap. When
melted, drain the corn very well. Mix all ingredients together and
refrigerate for 1 hour before serving.
Serve as a cold side dish or salad.
