INGREDIENTS

1 c Finely chopped onions
1 c Chopped green pepper
3 tb Bacon drippings
6 sl Fried bacon — crumbled
3 c White bread cubes
1 c Chopped walnuts
1 1/2 ts Salt
1 1/2 ts Thyme
1/2 ts Sage
6 Cornish hens
1/2 c Melted butter
1/2 c White wine
1 Clove garlic — crushed
1 1/2 ts Salt
2 ts Sage

INSTRUCTIONS

Saute onion and green pepper in bacon drippings. Add bacon, bread cubes,
walnuts and seasonings. Stuff hens, place in roaster pan. Combine remaining
ingredients; pour in roaster around hens. Bake at 4oo degrees for 1 hour;
baste occasionally with sauce. Turn off heat and cool hens in sauce for 30
minutes before serving.
