INGREDIENTS
1 1/2 | c | Yellow cornmeal |
2 | c | White flour |
1/2 | t | Baking Soda |
1/4 | t | Salt |
1/2 | c | Currants |
1/2 | c | Sugar |
INSTRUCTIONS
Thoroughly combine all & pour into clean paper bag. Attach a label with the following instructions: Preheat oven to 450 F. Spray a muffin tin with nonstick spray. Empty the mix into a large bowl & add 1/4 c canola oil & 2 c buttermilk, blending swiftly with wooden spoon. Pour batter into tins & bake for 20 minutes. Note: Prepare this muffin mix as a gift by enclosing it inside a brown paper lunch bag decorated with rubber stamp prints or stickers.
