Country Oat Cake

INGREDIENTS

1 pk Spice cake mix (18.5 oz.)
1 c Quaker Oats, uncooked (quick or old-fashioned)
8 oz Plain low-fat yogurt
3 Eggs; OR… Egg substitute
1/4 c Vegetable oil
1/4 c Water
1 1/2 c Finely chopped apple (about 2 medium)
1 c Quaker Oats, uncooked (quick or old-fashioned)
1/2 c Brown sugar, firmly packed
1/4 c Margarine or butter; melted
1/2 ts Ground cinnamon
Whipped cream (optional)

INSTRUCTIONS

TOPPING
Heat oven to 350 F.  Grease and flour 13 x 9-inch baking pan.  For cake,
combine first six ingredients.  Blend on low speed of electric mixer until
moistened; mix at medium speed 2 minutes.  Stir in apple.  Pour into
prepared pan.  For topping, combine oats, brown sugar, margarine and
cinnamon; mix well.  Sprinkle evenly over batter.  Bake 40 to 45 minutes
or until wooden pick inserted in center comes out clean.  Serve with
whipped cream, if desired.
