INGREDIENTS

Balsamic vinegar or vinegarette dressing
1 sm Zucchini
1/2 Onion
2 Cloves garlic; sliced (more or less to taste)
1 c Couscous
1 1/2 c Water
1 ts Italian spices
1 tb Parmesan (optional)

INSTRUCTIONS

Dice zucchini, and slice onion and garlic.  Saute in 1 tablespoon of
vinegar or vinegarette dressing (we used Ken's balsamic and basil
vinegarette). When tender crisp, add water and bring to boil. Add couscous,
and turn off heat. Cover and let stand about 5 minutes. Add herbs and
parmesan and serve.
