Couscous Pilaf

INGREDIENTS

1 c Couscous -prepare according to directions on pkg.*
1 lg Onion; diced
Grated carrot
Sliced celery
Mushrooms; (if canned,drained)
Diced green/red pepper
1/2 c Raisins; (not recommended with mushrooms, celery, peppers)
1/2 c Dried apricots; chopped, (ditto)
Salt & pepper to taste
1/4 ts Allspice
Cinnamon
Cardamom
Nutmeg
Any combo of the above
2 Cloves garlic; (if fresh, saute with onion)
Cumin
1 tb Chopped parsley
1 c Couscous
2 C.chicken broth; (cube or powder in water)

INSTRUCTIONS

OPTIONAL
REST
SEASONINGS
WITH FRUIT
WITHOUT FRUIT
COUSCOUS IN MICROWAVE
~Combine couscous & hot broth in 2 qt. micro-safe casserole. Let stand
while the rest is being prepared.
~In micro-safe bowl combine onion, garlic, veggies with a bit of
oil/marg.
~Microzap UNcovered on HIGH for 3-4 minutes, till tender crisp. (The
more veggies, the longer it will take).
~Add to couscous/broth mixture. Stir in seasonings.
~Cover with casserole lid or vented plastic wrap. Microwave COVERED
on HIGH for 7-8 minutes, till liquid is absorbed.
~Let stand covered 2 mins. Fluff with fork.
~If too dry, add a little water, if too moist, return to microwave
for 1-2 mins.
~Adjust seasonings to taste.
Adapted recipe from Micro Ways, Norene Gilletz Exact amounts have not
been given as I don't measure spices or veggies.
