Couscous with Mushrooms

INGREDIENTS

3 c Defatted chicken or
Vegetable stock
2 c Quick-cooking couscous
3 Green onions — thinly
Sliced
4 tb Toasted pine nuts
1/2 c Thinly sliced mushrooms
Minced parsley — for
Garnish

INSTRUCTIONS

1. In a large saucepan over medium-high heat, bring stock to a boil. Stir
in couscous, onions, nuts, and mushrooms.
2. Immediately remove from heat, cover, and let stand until liquid is
absorbed (5 minutes). Serve garnished with parsley.
