INGREDIENTS
| 2 | lb | Gumbo crabs; shelled, rinsed and concasser (chopped) |
| 1/2 | lb | Onions; rough chop |

| 1/2 | lb | Celery; rough chop |
| 4 | Bay leaves | |
| 1 | ts | Whole dried thyme |
| 1/2 | tb | White peppercorns; whole |
| 1 | Head garlic; cut in half | |
| 4 | qt | Very cold water |
INSTRUCTIONS
